There are many amazing wines from the country of Georgia. Saperavi (sah-pear-ah-vee) is a dry red wine and the most popular of their red wine category. Saperavi wines are powerful, robust, and have often been compared to cabernet sauvignon. Aromas of dark fruits, cassis, spice, earth, and cigar smoke. Flavors of ripened cherries, mulberry, charred plum, polished leather, black licorice, dark chocolate, coffee, and tobacco. This red wine is extremely attractive, full bodied, tight structure, deep rich color, and lovely tannins. This is the perfect wine to pair with those barbecue spareribs. My favorite pairing is a turkey meatloaf sandwich with green onions. Saperavi Qvevri wines are produced in a clay vessel called “Qvevri.” These ancient clay pots are hand made by skilled craftsmen and are often large enough to fit two grown adults inside. The qveri adds a cool bright flavor profile to the wine. What is a Qvevri? Georgian wine is well known for the ancient heritage of making wine in qvevri pots.
