Fat Charles BBQ: Birmingham's Rising Star in Culinary Delights

In 2019, when Charles and Chris Pilot unveiled Fat Charles OG Tacos, Birmingham turned its attention. Their soft tortilla shells were filled with smoked chicken or brisket, accompanied by two to three freshly-grated cheeses, vibrant homemade Pico de Gallo, and their signature OG Sauce. The presentation was engaging, and the taste was unforgettable. A line quickly formed at their BBQ establishment, and soon after, the menu board read “Sold Out.” Chris reflected on the blessing of customer support in a city dense with dining options. The Pilot brothers, natives of Birmingham and E.B. Erwin High School alumni, initiated their culinary journey in 2017 by selling barbecue plates from Charles’ home. In 2020, they expanded to a food truck, with menu additions like shrimp and salmon tacos. Following Charles’ unexpected passing in late 2024, Chris persevered, honoring their shared dream. He continues to evolve Fat Charles BBQ, teaching youth through cooking classes, ensuring the legacy of connection and impact remains alive.
