This red blend is comprised of 40% Merlot, 30% Corvina, and 30% Croatina. All the grapes are from Valpantena in Valpolicella, Italy. The Merlot is dried for 1 month, the Corvina for 3 months, and the Croatina isn’t dried.&
The nose is lux with a scent of nutmeg, cherry flambé, and bitter almond.
Passimento Rosso is off-dry, rich and exhibits flavors of cherry, plum, baking spices, and a long raisin finish.
This wine is more of a first cousin to Amarone Della Valpolicella and produced in the appassimento style.
Appassimento translates to “fading”& in Italian and refers to a winemaking process where dried grapes, instead of fresh grapes are fermented.&
